Potatoes absorb all sorts of oil equally no matter if sesame, corn, cocos, olive oil or butter.

The difference lies in the temperature the fat can be heated up without scorching. You can“t use butter to deep fry potatoes but olive oil, cocos oil or clarified butter.

So chose the oil you like most and degrease the potatoes on kitchen paper.

Temperature makes the difference how much is absorbed, not the type of oil.
